This pear and chocolate brioche pudding from Neff has had us drooling since we first saw the photo! Perfect after a Sunday roast or even a Valentine’s Day meal perhaps?
Pear & Chocolate Brioche Pudding Recipe
Bottom heat 150ºC
Serves: 6-8
Prep: 25 minutes
Cook: 1 hours, plus cooling
Ingredients:
- 75g butter
- 30g caster sugar
- 340g pears – peeled, cored & quartered
- 285g brioche fingers, sliced in half lengthways
- 55g chopped dark or milk chocolate
- 2 tbsp clear honey, warmed
For the custard:
- 6 large egg yolks
- 170g caster sugar
- 375ml whole milk
- 125ml double cream
Method
Preheat your Neff oven to Bottom Heat 150ºC. For the custard, mix egg yolks & caster sugar. Pour milk and cream into a pan, heat until it boils. Whisk into the egg mix.
Rinse saucepan, pour the custard back in and heat gently until it starts to thicken.
Grease a 2-litre ovenproof dish with butter (around 15g). Melt 30g of butter in a non-stick frying pan, sprinkle in sugar and heat until it starts to caramelise. Add pears and cook for 8-10 minutes.
Spread the brioche with butter and layer into the dish with the pears and half the chocolate. Strain the custard over with the remaining chocolate.
Place dish in a deep roasting tin and cover halfway up with boiling water. Place on shelf 1, bake for 30 minutes.
Cool, drizzle with the warmed honey & serve.
